Happy 2016 everyone! I’m back after a little break and happy to be here. I hope you are all having a wonderful January so far.

For me, January is probably my first or second worst month. It’s between January and February. They are both so cold and dreary, the holidays are over, all the yummy Christmas treats are gone. Back to life, back to reality, back to healthy eating.

Well, I guess healthy eating doesn’t have to be horrible after all. Here are 10 warm and comforting soups that you need to make pronto. It may just make January your third worst month instead of your first worst month 🙂

Note: I like to use my 6 quart slow cooker for all of these soups.* This is my favorite slow cooker.

1.Slow Cooker Greek Lemon Chicken Soup

Ingredients you’ll need for this soup:

7 1/2 cups chicken broth

1 medium onion, julienned

8 garlic cloves, minced

1 lemon, zested and juiced

1 – 1 1/2 lbs of boneless, skinless chicken breasts

1/2 tsp crushed red pepper

3 egg yolks

1 cup uncooked couscous

Salt and pepper

Feta cheese

Fresh chives

2. Slow Cooker Ground Turkey Sausage, Barley and Mushroom Soup

Ingredients you’ll need for this soup:

1 lb turkey sausage(we always findthis kind in the freezer sectionof the grocerystoreor sometimes we can find this kindin associated foodstores)

1 medium onion

1 Tbsp tomato paste

1 cup diced celery

2 carrots (smallish) diced or grated

1/2 cup pearl barley(I always buy this in the bulksection of my Kroger/Smith’s grocery store)

3 1/2 cups chicken broth(or you can use water andbouillon)

1 cup water

1 (14.5 oz) can petite diced tomatoes(I like the petitebecause they aren’t such big chunks and therefore you can hide them better frompicky kids)

3/4 tsp salt

1/4 tsp black pepper(or more to taste)

1 bay leaf

2 cups diced mushrooms(you can leave this out but wesuper love mushrooms at our house)

3. Broccoli Cheddar Soup

Ingredients you’ll need for this soup:

1 lb yellow butter potatoes

2 cups chicken broth(orveggie broth)

1 medium yellow onion, diced

1 tsp olive or canola oil

2 green onions(greenand white parts all diced up)

2 garlic cloves, minced

1/4 tsp ground thyme

1/2 tsp salt

1/8 tsp pepper

1 lb frozen broccoli florets, thawed(I justkept them on my counter all morning)

2 oz extra sharp cheddar cheese, grated(usingextra sharp will give ultimate flavor so you don’t have to use as much)

1/2 cup half and half(you canalso use fat free half and half)

4. Green Chicken Chili with Avocados

Ingredients you’ll need for this soup:

2 lbs tomatillos (about 10 medium)

1 small white onion

2 Tbsp minced garlic

4 tsp cumin

2 tsp ground coriander

1 1/2 tsp minced canned chipotles in adobo sauce

2 tsp canola oil

3 cups chicken broth

2 lbs boneless, skinless chicken thighs, trimmed of excess fat

1 (4 oz) can diced green chiles

1 (14.5 oz) can great northern beans, drained and rinsed

1 tsp kosher salt

1 fresh lime, juiced

Salt and pepper

3 Tbsp cornstarch

Toppings: avocado slices, cilantro, tortilla chips, grated cheese,
sour cream

5. Creamy Cauliflower and Potato Soup

Ingredients you’ll need for this soup:

1/2 cup
diced white onion

1 garlic clove, minced

1/2 tsp canola oil

1/8 tsp ground nutmeg

1/8 tsp cayenne pepper

3 cups chicken broth (or 3 cups vegetable broth)

1/2 head cauliflower

8 oz yellow potatoes(this was just one large potato)

1/4 tsp salt

1/4 cup half and half (or heavy cream)

Salt and pepper, to taste

2 Tbsp diced Green onion (optional)

1/4 cup grated cheddar (optional)

1/4 cup bacon bits (optional)

6. Slow Cooker Turkey Lentil Chili

Ingredients you’ll need for this soup:

1 lb ground turkey

1 medium yellow onion, diced

2 minced garlic cloves

2 Tbsp tomato paste

1 1/2 tsp salt

1 cup dry green lentils

2 cups water

1 (8 oz) can tomato sauce

1 (14.5 oz) can petite diced tomatoes

1 (4 oz) can diced green chiles

2 tsp chili powder

1 tsp cumin

1/2 tsp pepper

Cilantro and sour cream, optional

2 onions,chopped fine

3 TbspThai red curry paste

1 tspcanola oil

4 cupschicken broth

1 Tbspfish sauce, plus extra for seasoning

Salt andpepper

2(12-ounce) bone-in split chicken breasts, skin removed, trimmed of all visiblefat

2 redbell peppers, stemmed, seeded, and cut into 1/2-inch pieces

8 ouncessnow peas, strings removed, cut into 1-inch pieces

8 ounceswhite mushrooms, trimmed and quartered

1 (13.5oz) can light coconut milk

1/2 cupfresh cilantro leaves

1 Tbsplime juice, plus extra for seasoning

8. Skinny Tomato Basil Parmesan Soup

Ingredients you’ll need for this soup:

1 cupfinely diced celery

1 cupfinely diced onion

1 cupgrated zucchini or grated carrots (or both)

2 (14 oz)cans diced tomatoes

1 bayleaf

1 tspdried oregano

1 Tbspdried basil

4 cupswater

2 tspShirley J chicken bouillon or 4 tsp regular chicken bouillon granules(Ifyou’re vegetarian you can substitute vegetable broth in place of the water andbouillon)

1/4 cupbutter

1/2 cupflour

1 cupParmesan cheese, grated

1 cupwarmed skim milk

1 tspsalt

1 tsppepper

1/2 cuppearl barley (not the quick-cooking kind)

1 garlicclove, minced

1-2cupsshredded chicken(pre-made)

1 Tbspolive oil

3 1/2cups chicken broth (or 3 cups water and 3 1/2 tsp chicken bouillon granules)

1 (14 oz)can diced tomatoes

3/4 tspsalt

1 tspdried basil

1 bayleaf

1/4 tspblack pepper

10. Pesto Minestrone Soup

Ingredients you’ll need for this soup:

1 small onion, diced

1 Tbsp olive oil

1 lb pork loin, cut into cubes(or you could use chicken
or no meat at all)

7 cups water

6 tsp chicken bouillon

1/2 cup green lentils

1 cup orzo, uncooked

1/2 cup ditalini pasta, uncooked

2 cups white mushrooms, sliced

1 cup basil pesto,divided

1 medium zucchini

1 bunch of kale

Parmesan cheese, for topping
